After the loaves cooled down, I cut them and the softness of the inner core turned out to have hardened. Also what seems to happen is that the moisture from inside penetrates the outer parts and softens this area.

the taste was: Pumpernickel
the color was: Pumpernickel
the crumb was: Pumpernickel
the size was: Pumpernickel
